My kids said my doughnuts look like cupcakes. What matters to me is that they're not fried, gluten-free, dairy-free, egg-free, and rich in protein. I decorated some with dark chocolate and coconut, some with chocolate and ground cashews, and some with almond butter. Happy holiday and enjoy.

Baked Sufganiyot
Baked (not fried) Hanukkah doughnuts, protein-rich, gluten-free, dairy-free, and egg-free.

Ingredients
- 2 cups green buckwheat flour
- 2 tbsp gluten-free psyllium
- 2-3 tbsp 100% natural date syrup
- 1 cup natural applesauce
- 1 cup milk
- 1 tsp aluminum-free baking powder
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Mix all the ingredients together in a bowl.
- 3Form balls (a round cavity pan gives a nice shape) and bake for about 25-30 minutes.
- 4Cool and decorate to taste (e.g. dark chocolate and coconut, chocolate and ground cashews, or almond butter).
