Protein Bagels with Orange Lentil Flour

Savory, indulgent bagels made with orange lentil flour and protein powder, topped with coarse salt and za'atar. High protein, gluten-free and vegan.

Ingredients

  • 2 tbsp flax seeds
  • 6 tbsp water (for the flax seeds)
  • 1 cup orange lentil flour
  • 1 cup protein powder (I use mung bean protein powder)
  • Protein yogurt (I used a soy-based yogurt)
  • Salt
  • Pepper
  • Za'atar
  • Red paprika
  • 1/2 cup water
  • Coarse salt and za'atar, for topping

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Grind the whole flax seeds into a powder in a spice grinder.
  3. 3Transfer the flax powder to a small bowl, add 6 tbsp water and set aside to rest for a few minutes.
  4. 4In a bowl, mix the remaining ingredients together with the rested flax seeds until you get a smooth dough.
  5. 5Shape into bagels however you like.
  6. 6Sprinkle coarse salt and plenty of za'atar on top.
  7. 7Lower the oven to 180°C (350°F) and bake for 20-25 minutes.

Some people love savory and some love sweet, and I love both, depending on the time and my mood. Today I'm in a savory mood, so here's an indulgent bagel topped with coarse salt and lots of za'atar. Enjoy!
