Protein Bagels with Orange Lentil Flour
Savory, indulgent bagels made with orange lentil flour and protein powder, topped with coarse salt and za'atar. High protein, gluten-free and vegan.

Ingredients
- 2 tbsp flax seeds
- 6 tbsp water (for the flax seeds)
- 1 cup orange lentil flour
- 1 cup protein powder (I use mung bean protein powder)
- Protein yogurt (I used a soy-based yogurt)
- Salt
- Pepper
- Za'atar
- Red paprika
- 1/2 cup water
- Coarse salt and za'atar, for topping
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Grind the whole flax seeds into a powder in a spice grinder.
- 3Transfer the flax powder to a small bowl, add 6 tbsp water and set aside to rest for a few minutes.
- 4In a bowl, mix the remaining ingredients together with the rested flax seeds until you get a smooth dough.
- 5Shape into bagels however you like.
- 6Sprinkle coarse salt and plenty of za'atar on top.
- 7Lower the oven to 180°C (350°F) and bake for 20-25 minutes.
