Vegan Cheese Burekas

Vegan cheese burekas made from green buckwheat dough - protein-rich, gluten-free, dairy-free, and egg-free.

Ingredients

  • 2 cups green buckwheat flour
  • 1 tsp aluminum-free baking powder
  • 2 heaping tbsp psyllium (essential for forming the dough)
  • 1/3 cup olive oil
  • salt and pepper
  • 1 cup water
  • filling of your choice (e.g. cashew cheese)
  • soy milk and sesame seeds for topping

Instructions

  1. 1Mix all the dough ingredients together, cover, and set aside for about 10 minutes.
  2. 2Knead the dough lightly until smooth.
  3. 3Preheat the oven to 200°C (390°F).
  4. 4Roll out the dough and cut out circles.
  5. 5Fill each circle with your chosen filling and fold into a bureka shape.
  6. 6Place on a tray, brush with a little soy milk, and sprinkle with sesame seeds.
  7. 7Bake for about 20-25 minutes until golden.
