Protein Ice Cream Popsicles with Berry Coating

Homemade popsicles from cashews, protein yogurt and dates, dipped in a frozen berry coating. A sweet, wholesome treat after a strength workout.

Ingredients

For the ice cream

  • 1 cup natural cashews, soaked for at least 2 hours
  • Protein yogurt (I used a soy-based vegan protein yogurt)
  • 5 medium dates, pitted

For the coating

  • 3 cups frozen mixed berries
  • 1 banana
  • 2 tablespoons 100% pure maple syrup
  • 2 tablespoons chia seeds

Instructions

  1. 1Add the cashews, protein yogurt and dates to a powerful blender and blend until smooth and uniform.
  2. 2Pour the mixture into popsicle molds and freeze for at least 2 hours.
  3. 3Meanwhile, make the coating: blend the frozen berries, banana, maple syrup and chia seeds until you get a smooth mixture.
  4. 4Once the popsicles are set, dip them in the berry coating and return them to the freezer until the coating firms up.
