Green Buckwheat Protein Pancakes

Indulgent protein pancakes built on green buckwheat flour, silken tofu and protein yogurt, perfect for a post strength workout meal.

Ingredients

  • 1 cup green buckwheat flour
  • Silken tofu
  • Protein yogurt (vegan yogurt works too)
  • 3 heaping tablespoons applesauce
  • 2 tablespoons chia seeds
  • 1 teaspoon aluminum-free baking powder
  • 1 cup milk (soy milk works too)
  • A little coconut oil for frying

Instructions

  1. 1Place all the ingredients in a bowl.
  2. 2Blend with an immersion blender into a smooth batter.
  3. 3Heat a pan with a little coconut oil.
  4. 4Pour in the batter and fry the pancake until golden on both sides.
