Vegan Green Buckwheat Pancakes

Gorgeous pancakes that are gluten-free, dairy-free, and egg-free, very high in protein and completely vegan. Soft, lightly sweet, and perfect for an indulgent breakfast.

Ingredients

  • 1 cup green buckwheat flour
  • 1 tsp aluminum-free baking powder
  • 1 tsp natural vanilla extract
  • Protein yogurt (I used vegan yogurt)
  • 1 cup soy milk (or any milk you like)
  • 2 tsp 100% natural maple syrup
  • Pomegranate seeds to serve (optional)

Instructions

  1. 1In a bowl, mix the green buckwheat flour, baking powder, and vanilla extract.
  2. 2Add the protein yogurt, soy milk, and maple syrup, and stir into a smooth batter.
  3. 3Heat a pan over medium heat and lightly grease it.
  4. 4Pour a ladle of batter for each pancake and cook until bubbles form on the surface, then flip and cook the other side until golden.
  5. 5Serve with maple syrup and pomegranate seeds on top.
