Healthy Hamantaschen

A healthy, smart and delicious take on hamantaschen - gluten-free, dairy-free, egg-free, high in protein and vegan. Who said hamantaschen have to be a bomb of sugar and white flour?

Ingredients

  • 1¼ cups gluten-free oat flour (you can grind gluten-free oats at home)
  • ¼ cup natural 10% maple syrup
  • ½ cup natural almond butter
  • ½ tsp aluminum-free baking powder
  • 100% natural date paste, for filling
  • Half a walnut per cookie, for filling

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2In a bowl, mix and knead the dough ingredients until you get a smooth, non-sticky dough.
  3. 3Roll out the dough - it is easiest to roll it between two sheets of parchment paper.
  4. 4Cut out circles in your desired size.
  5. 5Fill each circle with date paste and half a walnut (or whatever you like).
  6. 6Fold into the hamantaschen shape and bake for about 20 minutes.
