Chia Seed Pudding with Strawberries and Chocolate

A high-protein breakfast built on chia seeds, fresh strawberries and a dark chocolate topping. Sweet, indulgent and easy to make ahead.

Ingredients

  • 3 tablespoons chia seeds
  • 1 cup milk (I used unsweetened soy milk)
  • 1 teaspoon natural maple syrup
  • 7-8 strawberries (depending on size, frozen work too)
  • 4 squares dark chocolate
  • 1 teaspoon coconut oil

Instructions

  1. 1Add the cup of milk and the strawberries to a blender and blend until you get a smooth liquid mixture.
  2. 2Place 3 tablespoons of chia seeds in a small bowl and pour the milk and strawberry liquid over them.
  3. 3Add 1 teaspoon of natural maple syrup, stir, and refrigerate for 10 minutes.
  4. 4Meanwhile, place the dark chocolate squares and 1 teaspoon of coconut oil in a small bowl and microwave for 30 seconds to 1 minute, until you get a smooth chocolate liquid.
  5. 5Take the bowl out of the fridge, pour the chocolate liquid over it, and return it to the fridge for a few minutes until the chocolate sets.
