Vegan Cashew Chocolate Popsicles
Creamy chocolate popsicles built on cashews and coconut cream, high in protein and dipped in dark chocolate. Gluten-free, dairy-free, and egg-free.

Ingredients
For the popsicles
- 1 cup cashews, soaked at least 2 hours in lukewarm water
- 1 cup coconut cream
- 2 tablespoons cocoa
- 1/4 cup 100% natural maple syrup
- 1/2 cup water
For the coating
- 1 bar dark chocolate
- 3 tablespoons coconut oil
Instructions
- 1Blend all the popsicle ingredients together until you get a smooth, chocolatey texture.
- 2Pour the mixture into a popsicle mold. The amount makes four popsicles.
- 3Freeze for at least three hours until the popsicles set.
- 4For the coating: melt the dark chocolate with the coconut oil in the microwave for about a minute and a half, until fully melted.
- 5Dip each popsicle in the melted chocolate and return to the freezer until the coating hardens.
