Vegan Green Buckwheat and Silken Tofu Pizza

A glorious homemade pizza that comes together in minutes, built on a dough of green buckwheat flour and silken tofu. Gluten-free, dairy-free, egg-free, very high in protein and fully vegan.

Ingredients

For the dough

  • 2 cups green buckwheat flour
  • 1 tsp aluminum-free baking powder
  • 1 package silken tofu
  • Salt, pepper and spices you like

For the topping

  • Tomato sauce of your choice
  • Vegan cheese
  • Onion
  • Mushrooms
  • Tomatoes
  • Olives
  • Any other toppings you like

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend the silken tofu until you get a soft, smooth cream.
  3. 3In a bowl, combine the buckwheat flour, baking powder, silken tofu and spices. Mix and knead lightly until you get an even dough.
  4. 4Spread the dough out on a baking tray.
  5. 5Bake at 180°C (350°F) for 10-15 minutes.
  6. 6When the dough is almost done, take it out of the oven and top with tomato sauce, vegan cheese, onion, mushrooms, tomatoes, olives and whatever you like.
  7. 7Return to the oven for about 10 more minutes until the pizza is ready.
