Vegan Tofu Schnitzel
A healthy lunch schnitzel that is gluten-free, egg-free, very high in protein, and of course vegan. Instead of chicken breast you work with firm tofu and oats to get crispy, tasty schnitzels.

Ingredients
- 600 g firm tofu
- 1 cup gluten-free oats
- Spices to taste: salt, black pepper, smoked paprika, nutritional yeast, and a little cumin
- Gluten-free breadcrumbs for coating
- A little olive oil for frying
Instructions
- 1Blend all the ingredients together in a blender until you get a slightly sticky dough.
- 2With wet hands, shape the schnitzels to your preferred size.
- 3Dip the schnitzels in gluten-free breadcrumbs.
- 4Heat a little olive oil in a pan and fry the schnitzels, or arrange them on a baking tray and bake until golden.
