Vegan Quinoa Chocolate Cake

A soft, melt-in-your-mouth chocolate cake built on cooked quinoa. Gluten-free, dairy-free, egg-free, and very high in protein.

Ingredients

  • 2 cups quinoa cooked in water only (I used tri-color quinoa)
  • 4-5 tablespoons 100% natural silan (date syrup)
  • 4 tablespoons quality cocoa
  • 4 tablespoons almond butter
  • 2 handfuls of a nut and dried cranberry mix to taste, coarsely chopped

Instructions

  1. 1Preheat the oven to 200°C (400°F).
  2. 2In a bowl, mix all the ingredients until you get a smooth batter.
  3. 3Transfer the batter to a baking pan and place it in the oven.
  4. 4Lower the heat to 180°C (350°F) and bake for about half an hour.
