Vegan Cheesecake

A festive vegan 'cheesecake' on a nut crust - gluten-free, dairy-free, and egg-free.

Ingredients

For the crust

  • 1 cup walnuts (soaked for at least 1 hour)
  • 1 cup cashews (soaked for at least 1 hour)
  • 2-3 tbsp coconut oil
  • ½ tsp cinnamon
  • ½ cup fine gluten-free oats
  • 2 tbsp date syrup

For the filling

  • 2 packs vegan cream cheese
  • 1 sachet instant vanilla pudding
  • 500 g whippable plant cream
  • 430 g vegan yogurt

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Grind the cashews and walnuts into a coarse flour and transfer to a bowl.
  3. 3Add the rest of the crust ingredients and form a sticky dough.
  4. 4Press the dough into a pan and bake at 180°C (350°F) for about 15-20 minutes, then cool.
  5. 5Whip the plant cream until stiff.
  6. 6Add the cream cheese, yogurt, and vanilla and mix into a smooth batter.
  7. 7Pour the filling over the cooled crust and refrigerate for a few hours until set.

Every now and then a treat is in order, and this time it's a vegan 'cheesecake' for the holiday: gluten-free, dairy-free, and egg-free, but seriously delicious. Love your body and treat it to good things.
