Vegan Cheesecake
A festive vegan 'cheesecake' on a nut crust - gluten-free, dairy-free, and egg-free.

Ingredients
For the crust
- 1 cup walnuts (soaked for at least 1 hour)
- 1 cup cashews (soaked for at least 1 hour)
- 2-3 tbsp coconut oil
- ½ tsp cinnamon
- ½ cup fine gluten-free oats
- 2 tbsp date syrup
For the filling
- 2 packs vegan cream cheese
- 1 sachet instant vanilla pudding
- 500 g whippable plant cream
- 430 g vegan yogurt
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Grind the cashews and walnuts into a coarse flour and transfer to a bowl.
- 3Add the rest of the crust ingredients and form a sticky dough.
- 4Press the dough into a pan and bake at 180°C (350°F) for about 15-20 minutes, then cool.
- 5Whip the plant cream until stiff.
- 6Add the cream cheese, yogurt, and vanilla and mix into a smooth batter.
- 7Pour the filling over the cooled crust and refrigerate for a few hours until set.
