It all started when one of my trainees asked me for a light lunch idea with minimal kitchen time, so I came up with these crispy tofu cubes. I like to serve them over a fresh vegetable salad and enjoy every bite. Enjoy!

Crispy Tofu Cubes
Crispy tofu cubes coated in brewer's yeast and lentil flour, pan-fried in a little olive oil until golden. Perfect for a light lunch over a fresh vegetable salad.

Ingredients
- 1 package (300g) tofu
- 2 tablespoons brewer's yeast
- 2 tablespoons orange lentil flour
- 1 heaping tablespoon garlic powder
- Salt and pepper to taste
- A little olive oil for frying
Instructions
- 1Pat the tofu dry with paper towel to remove excess liquid, then cut into cubes.
- 2In a bowl, combine the brewer's yeast, lentil flour, garlic powder, salt and pepper.
- 3Add the tofu cubes and toss until fully coated in the mixture.
- 4Heat a little olive oil in a pan.
- 5Add the tofu and stir-fry until a crispy golden coating forms.
- 6Make a vegetable salad with cherry tomatoes, red onion, basil leaves and a few pine nuts, and season with salt, pepper, olive oil and lemon juice.
- 7Add the crispy tofu cubes to the salad and serve.
