Crispy Tofu Cubes

Crispy tofu cubes coated in brewer's yeast and lentil flour, pan-fried in a little olive oil until golden. Perfect for a light lunch over a fresh vegetable salad.

Ingredients

  • 1 package (300g) tofu
  • 2 tablespoons brewer's yeast
  • 2 tablespoons orange lentil flour
  • 1 heaping tablespoon garlic powder
  • Salt and pepper to taste
  • A little olive oil for frying

Instructions

  1. 1Pat the tofu dry with paper towel to remove excess liquid, then cut into cubes.
  2. 2In a bowl, combine the brewer's yeast, lentil flour, garlic powder, salt and pepper.
  3. 3Add the tofu cubes and toss until fully coated in the mixture.
  4. 4Heat a little olive oil in a pan.
  5. 5Add the tofu and stir-fry until a crispy golden coating forms.
  6. 6Make a vegetable salad with cherry tomatoes, red onion, basil leaves and a few pine nuts, and season with salt, pepper, olive oil and lemon juice.
  7. 7Add the crispy tofu cubes to the salad and serve.

It all started when one of my trainees asked me for a light lunch idea with minimal kitchen time, so I came up with these crispy tofu cubes. I like to serve them over a fresh vegetable salad and enjoy every bite. Enjoy!
