Green Buckwheat Pita with Baked Falafel
Homemade green buckwheat pitas with oven-baked falafel, low in carbs and high in protein. Ten minutes of work and the oven does the rest.

Ingredients
For the pitas
- 300 g green buckwheat (soak at least 2 hours and rinse very well)
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp apple cider vinegar
- ¾ cup water
For the falafel
- 500 g chickpeas (soak at least 2 hours)
- 1 bunch parsley
- 1 bunch cilantro
- 3 garlic cloves
- 1 onion
- 2 tsp baking soda
- Spices to taste, and don't forget cumin
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Add all the pita ingredients to a strong blender and blend until you get a batter with a pancake-like texture.
- 3Shape the batter into 5 pitas on a parchment-lined tray and bake for about 20 minutes.
- 4For the falafel: blend all the ingredients in a strong blender.
- 5Line a tray with parchment paper and form the mixture into falafel balls.
- 6Bake for about 20-30 minutes until golden.
