High-Protein Green Buckwheat Rolls

Amazing rolls made from green buckwheat: gluten-free, vegan and high in protein. Just five simple ingredients and no flour at all.

Ingredients

  • 3 cups green buckwheat (measured after soaking for at least 2 hours)
  • 1/2 cup psyllium
  • 1 cup water
  • Salt to taste
  • 1 level teaspoon aluminum-free baking powder

Instructions

  1. 1Preheat the oven to 200°C (390°F). I always use the fan setting.
  2. 2Blend all the ingredients together until you get a smooth dough.
  3. 3Shape into any roll shape you like.
  4. 4Bake for 20-25 minutes at 180°C (350°F).

And this time? Meet the magic buckwheat. What more is there to say about green buckwheat that hasn't already been said? It's rich in iron, complete protein, zinc and dietary fiber. Enjoy!
