Red Lentil and Green Buckwheat Rolls

Soft, airy rolls made from nothing but red lentil flour and green buckwheat flour. Gluten-free, egg-free, dairy-free, vegan, and protein-rich.

Ingredients

  • 1½ cups red lentil flour
  • 1 cup green buckwheat flour
  • 2 tbsp apple cider vinegar
  • 1 tsp aluminum-free baking powder
  • 4 tbsp olive oil
  • 2 cups water
  • 3 tbsp psyllium (essential, no substitute)
  • Sesame seeds for sprinkling

Instructions

  1. 1Preheat the oven to 200°C (400°F).
  2. 2In a bowl, mix all the ingredients into a uniform, slightly sticky dough.
  3. 3Cover and let the dough rest for about 10 minutes.
  4. 4Shape into rolls in any shape you like (you can also make a loaf).
  5. 5Sprinkle generously with sesame seeds.
  6. 6Lower the heat to 180°C (350°F) and bake for 20-25 minutes.
