Red Lentil and Green Buckwheat Rolls
Soft, airy rolls made from nothing but red lentil flour and green buckwheat flour. Gluten-free, egg-free, dairy-free, vegan, and protein-rich.

Ingredients
- 1½ cups red lentil flour
- 1 cup green buckwheat flour
- 2 tbsp apple cider vinegar
- 1 tsp aluminum-free baking powder
- 4 tbsp olive oil
- 2 cups water
- 3 tbsp psyllium (essential, no substitute)
- Sesame seeds for sprinkling
Instructions
- 1Preheat the oven to 200°C (400°F).
- 2In a bowl, mix all the ingredients into a uniform, slightly sticky dough.
- 3Cover and let the dough rest for about 10 minutes.
- 4Shape into rolls in any shape you like (you can also make a loaf).
- 5Sprinkle generously with sesame seeds.
- 6Lower the heat to 180°C (350°F) and bake for 20-25 minutes.
