Passover Gluten-Free Challah

A soft braided Passover challah that is gluten-free, dairy-free and egg-free, and very high in protein. Built on cauliflower flour, almond flour and green buckwheat flour.

Ingredients

  • 1.5 cups cauliflower flour
  • 1 cup almond flour
  • 1 cup green buckwheat flour
  • 1 teaspoon aluminum-free baking powder
  • 2 tablespoons psyllium
  • 2.5 cups soy milk or water
  • Salt and spices to taste
  • Soy milk and sesame seeds for brushing and topping

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Mix all the ingredients in a bowl until you get a uniform, non-sticky dough.
  3. 3Divide the dough into three long ropes and braid them into a challah.
  4. 4Brush the challah with soy milk and sprinkle with sesame seeds.
  5. 5Bake for half an hour at 180°C (350°F).
