Passover Lentil Bread

A high-protein bread made from black and brown lentils, kosher for Passover, gluten-free, dairy-free, egg-free, and fully vegan.

Ingredients

  • 2 cups black lentils (before soaking)
  • 2 cups brown lentils (before soaking)
  • 4-5 tablespoons gluten-free psyllium
  • 2.5-3 cups soda water
  • Spices to taste (I used salt and black pepper)
  • 1 teaspoon aluminum-free baking powder

Instructions

  1. 1Soak the lentils for at least two hours, or overnight if you prefer.
  2. 2Rinse the lentils well.
  3. 3Preheat the oven to 200°C (390°F).
  4. 4Blend all the ingredients in a powerful blender until you get a smooth, non-sticky dough.
  5. 5Place the dough on a parchment-lined baking tray and shape it into the loaf form you like.
  6. 6Sprinkle sesame seeds or any other topping you love on top.
  7. 7Bake for 25-30 minutes at 180°C (350°F).
