Pinto Bean Bread
A homemade bread made from pinto beans, rich in quality protein, iron and dietary fiber. Gluten-free, dairy-free, egg-free and fully vegan.

Ingredients
- 3 cups pinto beans, soaked for at least 2 hours (I soaked mine overnight)
- 3 tablespoons gluten-free psyllium
- 1 1/2 cups water
- Seasonings to taste - I used pink Himalayan salt, black pepper and za'atar
- 1 teaspoon aluminum-free baking powder
- 2 tablespoons organic apple cider vinegar
- 2 tablespoons olive oil
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Add all the ingredients to a strong blender and blend until you get a smooth, uniform dough.
- 3Transfer the dough to a baking pan and, with wet hands, shape it into the loaf you want. You can also form rolls!
- 4Lower the oven to 180°C (350°F) and bake for 30-35 minutes.
