Protein Cheesecake

A vegan, protein-rich, low-carb cheesecake baked in a water bath, gluten-free.

Ingredients

  • 2 protein yogurts (e.g. vegan soy-based yogurt)
  • 2 vegan vanilla yogurts
  • 1¼ cups almond flour
  • 1 tbsp date sugar
  • 8 tbsp applesauce
  • coconut oil for greasing the pan

Instructions

  1. 1Fill a baking tray with tap water.
  2. 2Preheat the oven to 200°C (390°F).
  3. 3Mix all the ingredients in a bowl; taste and adjust sweetness (date sugar, lemon zest, or any topping you like).
  4. 4Grease the cake pan with coconut oil and pour in the batter.
  5. 5Place the cake pan inside the water-filled tray and lower the heat to 180°C (350°F).
  6. 6Bake for about 25-30 minutes. Only taste once it has cooled.

After one of my clients finished an impressive weight-loss journey, we reached the maintenance stage and added something sweet to the menu in the form of a cheesecake. Rich in protein, low in carbs, gluten-free, and vegan. Enjoy.
