Protein Honey Cake Without Honey

A soft honey cake for the New Year, with no honey at all and loaded with protein, built on almond flour and green buckwheat flour.

Ingredients

  • 3/4 cup almond flour
  • 3/4 cup green buckwheat flour
  • 1 tsp aluminum-free baking powder
  • 1 heaping tsp cinnamon
  • 1/2 cup applesauce
  • 1/2 cup maple syrup or date syrup
  • 1/4 cup oil (I used grapeseed oil)
  • 1/2 cup strong tea
  • Sliced almonds for topping

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Mix all the ingredients in a bowl until you get a smooth batter.
  3. 3Transfer to a pan and scatter sliced almonds on top.
  4. 4Bake at 180°C (350°F) for 25-30 minutes.
