Red Lentil Flour and Pumpkin Seed Rolls
Wholesome rolls made from red lentil flour and pumpkin seeds. Gluten-free, dairy-free, egg-free, very high in protein, and fully vegan.

Ingredients
- 3 cups red lentil flour
- 1 cup pumpkin seeds
- 3 tablespoons psyllium
- Salt
- Pepper
- 1 teaspoon aluminum-free baking powder
- 2 tablespoons natural apple cider vinegar
- 2 cups water
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Grind the pumpkin seeds into flour in a powerful blender.
- 3Place all the ingredients in a bowl and mix until you get a relatively sticky dough.
- 4Cover and set aside for 10 minutes.
- 5Shape into rolls however you like (I made bite-sized rolls) and sprinkle whole pumpkin seeds on top.
- 6Bake for 20-25 minutes.
