Sweet Potato and Chickpea Flour Pizza

An incredibly tasty pizza on a sweet potato and chickpea flour crust, gluten-free, dairy-free, egg-free, vegan, and high in protein.

Ingredients

  • 2-3 medium sweet potatoes
  • 1 cup chickpea flour
  • 1 tsp salt
  • Black pepper to taste
  • 1 tsp oregano
  • 1 tsp baking powder or baking soda
  • Tomato sauce to taste
  • Vegan soy-based yellow cheese
  • Toppings to taste

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Microwave the sweet potatoes for 7-8 minutes until soft enough to mash.
  3. 3In a bowl, combine the sweet potatoes, chickpea flour, and spices.
  4. 4Mash everything together until you get a lovely dough.
  5. 5Spread the dough onto a pizza pan, flatten it, and bake for about 15 minutes at 180°C (350°F).
  6. 6Remove the crust, spread the sauce over it, and add all the toppings and the vegan yellow cheese.
  7. 7Return to the oven for another 15 minutes or so, then serve.
