Vegan Chocolate Mousse Cake
A rich chocolate mousse cake on an almond flour crust, gluten-free, dairy-free, egg-free and packed with protein.

Ingredients
For the crust
- 2 cups almond flour
- 1 tablespoon coconut oil
- 2 tablespoons cocoa
- 2 tablespoons 100% natural maple syrup
For the chocolate mousse
- 400 g dark chocolate, at least 70% cocoa solids
- 400 g coconut cream
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2In a bowl, mix all the crust ingredients until you get a sandy texture.
- 3Place the sandy crust on a baking tray lined with parchment paper and flatten it with the palms of your hands until smooth.
- 4Put it in the preheated oven and bake for 10-15 minutes at 180°C (350°F).
- 5Once the crust is ready, remove it from the oven to cool.
- 6Meanwhile, place the dark chocolate in a bowl, microwave for about a minute (depending on the power of your microwave) until the chocolate is melted, then remove.
- 7Pour the coconut cream into the bowl with the melted chocolate and mix until you get a smooth, uniform chocolate mousse cream.
- 8Pour the chocolate mousse over the cooled crust and refrigerate to chill and set.
