Vegan Chocolate Mousse Cake

A rich chocolate mousse cake on an almond flour crust, gluten-free, dairy-free, egg-free and packed with protein.

Ingredients

For the crust

  • 2 cups almond flour
  • 1 tablespoon coconut oil
  • 2 tablespoons cocoa
  • 2 tablespoons 100% natural maple syrup

For the chocolate mousse

  • 400 g dark chocolate, at least 70% cocoa solids
  • 400 g coconut cream

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2In a bowl, mix all the crust ingredients until you get a sandy texture.
  3. 3Place the sandy crust on a baking tray lined with parchment paper and flatten it with the palms of your hands until smooth.
  4. 4Put it in the preheated oven and bake for 10-15 minutes at 180°C (350°F).
  5. 5Once the crust is ready, remove it from the oven to cool.
  6. 6Meanwhile, place the dark chocolate in a bowl, microwave for about a minute (depending on the power of your microwave) until the chocolate is melted, then remove.
  7. 7Pour the coconut cream into the bowl with the melted chocolate and mix until you get a smooth, uniform chocolate mousse cream.
  8. 8Pour the chocolate mousse over the cooled crust and refrigerate to chill and set.
