Flaxseed Bread
A gluten-free, vegan flaxseed bread that's high in protein and iron and low in carbs. You grind the flaxseeds fresh, mix everything in one bowl, and bake an amazing loaf.

Ingredients
- 1.5 cups flaxseeds (it's really important not to buy pre-ground flaxseeds but to grind them yourself, right before making the bread, to keep the nutritional value)
- 1/2 cup psyllium
- 4 tablespoons tahini (whole Ethiopian tahini preferred)
- 1 teaspoon aluminum-free baking powder
- 2 cups lukewarm water
- A pinch of salt
Instructions
- 1Preheat the oven to 200°C (390°F). I always use the fan setting.
- 2Grind the flaxseeds in a spice grinder.
- 3Put all the ingredients in a bowl, mix, and let the dough rest for at least 15 minutes.
- 4Shape the bread however you like and transfer it to the oven.
- 5Lower the oven temperature to 180°C (350°F) and bake for 20 minutes, and you've got an amazing loaf.
