Vegan Green Buckwheat Rolls

Green buckwheat rolls that are gluten-free, dairy-free and egg-free. Rich in protein, iron, zinc and dietary fiber, and of course vegan.

Ingredients

  • 4 cups green buckwheat, soaked for at least 2 hours
  • 2 cups water
  • 2 heaping tablespoons psyllium (the rolls cannot be made without psyllium and there is no substitute)
  • 1 teaspoon salt
  • 3 tablespoons brewer's yeast (optional, may contain gluten)
  • 1 teaspoon 100% natural date syrup (silan)
  • 1 teaspoon aluminum-free baking powder
  • Sesame seeds for topping (optional)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend all the ingredients in a blender until you get a firm, slightly sticky dough.
  3. 3Shape the rolls into any form you like. You don't have to use a roll pan to make finger rolls.
  4. 4Sprinkle the rolls with whatever you like. I used sesame seeds.
  5. 5The batter makes 8 rolls.
  6. 6Place in the oven and lower the heat to 180°C (350°F).
  7. 7Bake for half an hour and you have indulgent rolls.
