Vegan Protein Honey Cake
A vegan honey cake for Rosh Hashanah, high in protein, low in carbs, and seriously delicious.

Ingredients
- 1 cup orange lentil flour
- 1 cup almond flour
- 1 teaspoon baking powder
- 1 tablespoon cinnamon
- 1/2 cup maple syrup
- 1/2 cup natural silan (date syrup)
- 2 tablespoons coconut oil
- 1/2 cup boiling water with 1 tablespoon instant coffee
- 3/4 cup applesauce
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Mix all the ingredients together into a smooth batter.
- 3Grease a baking pan with coconut oil and pour in the batter.
- 4Bake for 20-25 minutes at 180°C (350°F).
