Vegan Protein Honey Cake

A vegan honey cake for Rosh Hashanah, high in protein, low in carbs, and seriously delicious.

Ingredients

  • 1 cup orange lentil flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1/2 cup maple syrup
  • 1/2 cup natural silan (date syrup)
  • 2 tablespoons coconut oil
  • 1/2 cup boiling water with 1 tablespoon instant coffee
  • 3/4 cup applesauce

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Mix all the ingredients together into a smooth batter.
  3. 3Grease a baking pan with coconut oil and pour in the batter.
  4. 4Bake for 20-25 minutes at 180°C (350°F).
