Servings4-6 rolls
Ingredients
- 1 cup chickpea flour
- 1/4 cup raw tahini (I use full Ethiopian cold-pressed tahini)
- 1 tablespoon dry yeast
- 1 tablespoon apple cider vinegar
- 1 tablespoon 100% natural maple syrup
- 2 tablespoons ground flax seeds + 1/4 cup water (grind them yourself in a spice grinder close to preparation time)
- 3 tablespoons chia seeds + 1/4 cup water
- 1/3 cup soy milk or any milk of your choice
- Salt and pepper to taste
Instructions
- 1Preheat the oven to 150°C (300°F).
- 2Grind the flax seeds, place the ground flax in a bowl with 1/4 cup water and wait about 10 minutes.
- 3In a separate small bowl, place the chia seeds with 1/4 cup water and wait about 10 minutes.
- 4In a bowl, mix all the ingredients, add the chia seeds and flax seeds and mix until you get a relatively sticky dough.
- 5To make rolls you'll need a baguette pan. If you don't have one, pour the batter into a loaf pan and you'll get a magnificent bread.
- 6Form the rolls and bake at 150°C (300°F) for 30-40 minutes.
