Chickpea and Tahini Bread

The most Israeli bread there is, made from chickpea flour and tahini. Gluten-free, dairy-free, egg-free and very high in protein.

Ingredients

  • 1 cup chickpea flour
  • 1/4 cup raw tahini (I use full Ethiopian cold-pressed tahini)
  • 1 tablespoon dry yeast
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon 100% natural maple syrup
  • 2 tablespoons ground flax seeds + 1/4 cup water (grind them yourself in a spice grinder close to preparation time)
  • 3 tablespoons chia seeds + 1/4 cup water
  • 1/3 cup soy milk or any milk of your choice
  • Salt and pepper to taste

Instructions

  1. 1Preheat the oven to 150°C (300°F).
  2. 2Grind the flax seeds, place the ground flax in a bowl with 1/4 cup water and wait about 10 minutes.
  3. 3In a separate small bowl, place the chia seeds with 1/4 cup water and wait about 10 minutes.
  4. 4In a bowl, mix all the ingredients, add the chia seeds and flax seeds and mix until you get a relatively sticky dough.
  5. 5To make rolls you'll need a baguette pan. If you don't have one, pour the batter into a loaf pan and you'll get a magnificent bread.
  6. 6Form the rolls and bake at 150°C (300°F) for 30-40 minutes.
