Flax and Chia Seed Bread

A simple four-ingredient bread, gluten-free, dairy-free and egg-free, very high in protein and vegan. Two minutes of work and you have a gorgeous loaf.

Ingredients

  • 1 cup whole flax seeds
  • 1 cup chia seeds
  • 1 tablespoon psyllium
  • 1 to 1.5 cups water
  • Spices to taste (I used salt, black pepper and za'atar)

Instructions

  1. 1Preheat the oven to 150°C (300°F) to prevent oxidation of the oils in the flax and chia seeds.
  2. 2Grind the flax and chia seeds in a spice grinder. It's important to grind the flax seeds close to baking time to preserve their nutritional value.
  3. 3In a bowl, combine the ground flax and chia seeds, water, spices and psyllium, and mix into a slightly sticky dough.
  4. 4Shape it however you like - a loaf or rolls in any shape.
  5. 5Bake at a low 150°C (300°F) for about half an hour.
