Green and Black Lentil Bread

A gluten-free bread made from green and black lentils, very high in protein, egg-free, dairy-free, and fully vegan.

Ingredients

  • 2 cups green lentils, soaked for at least 2 hours
  • 2 cups black lentils, soaked for at least 2 hours
  • 2.5-3 cups water
  • 1/4 cup olive oil
  • 1 teaspoon aluminum-free baking powder
  • 1/2 cup brewer's yeast (optional)
  • 3 tablespoons psyllium (no substitute for psyllium!)
  • Seeds for sprinkling on top (optional)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2In a strong blender, add all the ingredients and blend until you get a smooth, slightly sticky dough.
  3. 3Shape it however you like: a braided challah, finger rolls, or burger buns.
  4. 4Sprinkle your favorite seeds on top (optional).
  5. 5Lower the oven to 180°C (350°F) and bake for 25-30 minutes.
