Green Lentil Rolls

Soft, tasty rolls made from green lentils. Gluten-free, vegan, and rich in protein, fiber, calcium, potassium, and iron.

Ingredients

  • 3 cups green lentils, soaked in water for at least 2 hours up to overnight
  • 2 cups water
  • 8 tablespoons psyllium
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • A little salt

Instructions

  1. 1Add all the ingredients to a strong blender and blend until you get a firm dough.
  2. 2Preheat the oven to 200°C (390°F).
  3. 3Thanks to the psyllium you can shape the rolls however you like. Form the rolls. This amount made me 7 medium rolls.
  4. 4Lower the oven to 180°C (350°F) and bake the rolls for about 20 minutes.
