Lentil and Millet Flour Bread

A wonderful bread made from red lentil flour and millet flour, gluten-free and high in protein. Two seconds of work and an amazing result.

Ingredients

  • 1 cup red lentil flour
  • 1 cup millet flour
  • 150 g silken tofu (or 2 eggs)
  • 1 tsp aluminum-free baking powder
  • 2 tsp 100% natural maple syrup
  • 2 heaping tbsp tahini (I use full Ethiopian tahini)
  • 1 cup water or plant milk
  • 1 tbsp apple cider vinegar
  • Pumpkin seeds for sprinkling (to taste)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend the silken tofu in a blender.
  3. 3Place all the ingredients in a bowl and add the tofu (or eggs).
  4. 4Mix until you get a smooth batter, then pour into a baking pan.
  5. 5Sprinkle the seeds you love on top. I used pumpkin seeds.
  6. 6Lower the heat to 180°C (350°F) and bake for 25-30 minutes.
