Protein Cinnamon Roll Cake

A rolled cake with a cinnamon filling: gluten-free, high in protein, dairy-free, egg-free, low carb, and vegan. Perfect alongside your coffee.

Ingredients

For the dough

  • 1 cup almond flour
  • 1 heaping tablespoon protein powder (I use mung bean protein powder)
  • 1/2 tablespoon psyllium
  • 1 tablespoon cinnamon
  • 1 tablespoon natural maple syrup
  • 3-4 tablespoons soy milk

For the filling

  • 1 tablespoon cinnamon
  • 1 tablespoon coconut oil
  • 1 tablespoon natural maple syrup

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2In a bowl, mix all the dough ingredients and knead until you get a smooth, non-sticky dough.
  3. 3Spread the filling ingredients over the dough.
  4. 4Roll it up and transfer to a baking tray.
  5. 5Lower the heat to 180°C (350°F) and bake for about 20 minutes.
