Red Lentil, Millet and Nut Bread
A healthy bread that's gluten-free, dairy-free and egg-free, very high in protein and vegan. Five minutes of work and you have a fine loaf with walnuts, cashews and pistachios.

Ingredients
- 1 cup red lentil flour
- 1 cup millet flour
- 1 cup ground flaxseed (grind just before making the bread)
- 1/2 cup chia seeds + 1/3 cup water to soak
- 2 tablespoons psyllium
- 1/3 cup coarsely chopped walnuts
- 1/3 cup coarsely chopped cashews
- 1/3 cup finely chopped pistachios
- Salt
- 1 teaspoon aluminum-free baking powder
- 500 ml water
Instructions
- 1Preheat the oven to 150°C (300°F).
- 2Soak the chia seeds in 1/3 cup water for about 10 minutes.
- 3Coarsely chop the nuts.
- 4Place all the ingredients in a bowl and mix until you get a slightly sticky, runny batter.
- 5Set aside to rest for another 10 minutes.
- 6Place in a parchment-lined pan and shape into a loaf or rolls as you like.
- 7Bake for 30-40 minutes at 150°C (300°F).
