Red Lentil, Millet and Nut Bread

A healthy bread that's gluten-free, dairy-free and egg-free, very high in protein and vegan. Five minutes of work and you have a fine loaf with walnuts, cashews and pistachios.

Ingredients

  • 1 cup red lentil flour
  • 1 cup millet flour
  • 1 cup ground flaxseed (grind just before making the bread)
  • 1/2 cup chia seeds + 1/3 cup water to soak
  • 2 tablespoons psyllium
  • 1/3 cup coarsely chopped walnuts
  • 1/3 cup coarsely chopped cashews
  • 1/3 cup finely chopped pistachios
  • Salt
  • 1 teaspoon aluminum-free baking powder
  • 500 ml water

Instructions

  1. 1Preheat the oven to 150°C (300°F).
  2. 2Soak the chia seeds in 1/3 cup water for about 10 minutes.
  3. 3Coarsely chop the nuts.
  4. 4Place all the ingredients in a bowl and mix until you get a slightly sticky, runny batter.
  5. 5Set aside to rest for another 10 minutes.
  6. 6Place in a parchment-lined pan and shape into a loaf or rolls as you like.
  7. 7Bake for 30-40 minutes at 150°C (300°F).
