Vegan Chocolate Cake with Pumpkin Seed Flour
An especially indulgent chocolate cake that is gluten-free, dairy-free and egg-free, very high in protein and genuinely delicious. The flour here is ground pumpkin seeds, and a cup of chocolate chips turns it into a real treat.

Ingredients
- 1.5 cups pumpkin seeds, ground into flour (grind your own in a home grinder)
- 1 tsp aluminum-free baking powder
- 1/4 cup quality cocoa
- 1/4 cup 100% natural applesauce
- 1 tbsp coconut oil
- 1/2 cup soy milk
- 1/4 cup 100% natural maple syrup
- 1 cup quality chocolate chips (optional, if you feel like indulging)
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Grind the pumpkin seeds into flour in a home grinder.
- 3In a bowl, mix all the ingredients together until you get a smooth batter.
- 4Transfer to a pan and bake at 180°C (350°F) for about 20 minutes.
