Vegan Gluten-Free Chocolate Cookies

Rich chocolatey cookies that are high in protein, gluten-free and vegan, perfect for the morning alongside your coffee. Everything goes into one blender, then into the oven.

Ingredients

  • 1 cup gluten-free oats
  • 1 cup almond flour
  • 1/2 cup chickpea flour
  • 3 tablespoons quality cocoa
  • 1 tablespoon aluminum-free baking powder
  • 4 tablespoons natural date syrup (silan)
  • 4 tablespoons applesauce
  • 1 cup milk of your choice (I used soy milk)
  • A handful of walnuts for garnish, flavor and nutrition

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Add all the ingredients to a blender and blend into a smooth batter.
  3. 3Pour into a baking pan, garnish with walnuts and place in the oven.
  4. 4Lower the heat to 180°C (350°F) and bake for 20 minutes.
  5. 5It is important to wait until fully cooled before eating.
